Amber's Perfect Pancakes
Ingredients:
- 1 cup/120g plain flour
- 2 tbsp sugar
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 cup/250ml buttermilk (or regular milk if you don’t have buttermilk!) Tip: You can make buttermilk by using regular milk and putting some lemon juice in.
- 1 large egg
- 2 tbsp melted butter (plus a little extra for cooking)
- 1 tsp vanilla extract
Instructions:
Mix the Dry Stuff: In a big bowl, whisk together your flour, sugar, baking powder, baking soda, and salt. Set it aside.
Whisk the Wet Stuff: In a separate bowl, whisk together the buttermilk (or milk), egg, melted butter, and vanilla.
Combine the Wet & Dry: Pour the wet ingredients into the dry ingredients and give it a gentle stir. Don’t worry if there are some lumps, that’s normal! Just don’t overmix it – the fluffier, the better!
Time to Cook:
Heat up a non-stick pan over medium heat. Lightly butter it up.
Pour ¼ cup of the batter onto the hot surface for each pancake.
Wait for bubbles to appear and the edges to look set (about 2-3 minutes), then flip ‘em and cook for another 1-2 minutes until golden brown and fluffy.
Serve and Enjoy!
Stack ‘em high and top with whatever you like – syrup, fresh berries, whipped cream... or all of the above!
